Gordon Ramsay Holdings sets date for Pétrus opening

Gordon Ramsay Holdings (GRH) has revealed that Pétrus is to re-open on 29 March.

Sean Burbidge will be head chef at the restaurant, which is being billed as a "re-birth". Burbidge is expected to work alongside Mark Askew, executive chef of GRH.

GRH lost the previous Michelin-starred Pétrus site at the Berkeley hotel after chef patron Marcus Wareing left the company to work directly with the Maybourne Hotel Group-owned property in Knightsbridge.

The new restaurant will be located around the corner from its old location, at 1 Kinnerton Street in Belgravia. 

GRH said that Burbidge would serve a modern European menu including dishes such as fillet of Angus beef with Swiss chard, wild mushrooms and red wine sauce and baked line-caught sea bass with confit fennel and caviar sauce.

Burbidge joined Restaurant Gordon Ramsay in 2003, progressing from chef de partie to sous chef, and in March 2008 moved to Versailles to launch Gordon Ramsay at the Trianon Palace.

Meanwhile, Jean-Philippe Susilovic will return as Restaurant Director, having directed Pétrus for five years.

The Russell Sage Studio has been responsible for the design of the dining room, creating a "modern, light and accessible space with a gentle palette of oyster, soft silver and copper tints". The firm was also responsible for the design of York & Albany and the soon-to-be-opened Savoy Grill.
