Seasonal Cumbrian Suckling Swaledale Lamb is available from Udale Speciality Foods' Cumbrian Fellbred factory until mid-September. The lamb is light, similar to a Pyreanean, fed on its mother's milk and the herbage of the lakes and fells, resulting in meat that is tender and succulent with a delicate flavour.
The carcass is smaller than average, typically 12kg to 14kg. The meat is considered by Bristol University to be high in beneficial omega-3 fatty acids compared with lowland breeds.
