Malcolm John, owner of neighbourhood restaurants Le Cassoulet and Fish & Grill in Croydon and Chiswick’s Le Vacherin, has acquired a new site in the Greater London borough of Sutton.

The award-wining chef-restaurateur, who has worked at London’s Bluebird Club and the Café Royal, has exchanged on the lease for the former Smollensky’s in Sutton, Surrey.

John will revamp the site and relaunch it as Brasserie Vacherin Malcolm John at the beginning of December, with 80-seats plus an additional 40 in the garden.

The restaurant, which will offer all-day dining seven days a week, will serve a classic French bistro menu with a focus on seasonal ingredients. The kitchen will be overseen by head chef Eric Landeau, former head chef of Le Bouchon Bordelaise in Battersea, south west London.

Interiors at Brasserie Vacherin Malcolm John will include wooden floors and leather banquette seating as well as a bar and crustacean counter.

John told Caterersearch he chose Sutton for his fourth restaurant because there was a lack of good restaurants in the area.

“I like to open restaurants in neighbourhoods that are under-served in terms of good restaurants,” he said.

“The site is in a good position on the high street and I am confident that I will attract diners not just from Sutton but also the surrounding areas in Surrey.”

Using foraged ingredients is nothing new but the trend has become more mainstream over the past two years. However, the wider use of foraged food in restaurants also carries a certain amount of danger.
