Peyton and Byrne to relaunch restaurant at the Royal Academy

Caterer Peyton and Byrne is taking over the food and beverage operation at the Royal Academy of Arts in London from next month.

The deal is the latest arts venue contract for the group, which also has concession outlets at the National Gallery, the Wallace Collection, the Institute of Contemporary Arts and the Wellcome Collection, all in London. It will see Peyton and Byrne responsible for creating and managing the four dining spaces at the privately funded institution on Piccadilly.

The restaurant and bar at the Royal Academy will undergo a complete refurbishment overseen by Design Research Studios, under the direction of Tom Dixon, and will reopen on 18 January. Peyton and Byrne chairman Oliver Peyton, Dixon and Royal Academy chief executive Charles Saumarez Smith have selected artwork from the Royal Academy's permanent collection to complement the design.

The all-day restaurant will be led by head chef Andrea Zuccolo and will serve a tapas-style menu using British ingredients. Dishes will include Scottish razor clams with chorizo, garlic, parsley and breadcrumbs; and game broth with organic barley and root vegetables.

The contract at the Royal Academy follows a recent multi-million pound deal won to provide services at the Royal Botanic Gardens in Kew, south west London. Other contracts held by Peyton and Byrne include the British Library and St Pancras Station.
