Raymond Blanc is to leave hospital after a fall downstairs at his Oxfordshire home left him with a badly broken leg and ankle – on the day of the 26th anniversary of his restaurant, Le Manoir aux Quat’Saisons.

Since the accident on 1 March, the chef patron of Le Manoir aux Quat’Saisons has had two operations to set six broken bones in his tibia and ankle at the John Radcliffe Hospital in Oxford.

“I cannot praise the surgeons and staff of the John Radcliffe highly enough,” Blanc said. “They have looked after me exceptionally well and made sure I did not suffer unnecessary pain. I am trying to look at this as an opportunity to write at least one of the books I have been meaning to get around to.

“I shall recuperate at Le Manoir as I have to stay off my feet for another twelve weeks.  However, this means that I can work with my team – lead by Philip Newman-Hall, director general manager, and my two brilliant generals - my executive chef, Gary Jones and chef patissier, Benoit Blin.”

Foraging – why all the attention?

Using foraged ingredients is nothing new but the trend has become more mainstream over the past two years. However, the wider use of foraged food in restaurants also carries a certain amount of danger.
