Roy Brett to open new restaurant in Edinburgh’s Missoni hotel

Multi award-winning chef Roy Brett is set to open a restaurant at Edinburgh’s new Missoni hotel.

The restaurant, to be called Ondine, after a mythological water spirit, is due to open in September.

Scottish-born Brett was previously chef director for hotelier Ken McCulloch in charge of developing the food offering for the Dakota and Columbus hotels. Prior to this he was the executive chef at Rick Stein's Seafood Restaurant in Padstow, Cornwall, for four years.

Brett said he had searched “long and hard for the right location” for the new restaurant.

“Set against the backdrop of Edinburgh’s historic old town, Ondine will bring together my passion for fish, shellfish and local produce, which will offer locals and visitors something quite different,” he said.

A tie-up with fashion house Missoni, the Missoni hotel was opened by the Rezidor Hotel Group last month after four years in the planning.

The 136-room hotel, located on the corner of George IV Bridge and the Royal Mile near Edinburgh Castle, will be followed by a Missoni in Kuwait City in autumn this year, with other properties in Oman, Cape Town and Salvador in Brazil next year. The company is also in negotiations for hotels in Stockholm and Oslo.
