Tom Berk to open American barbecue restaurant Red Dog Saloon in Hoxton

A new American barbecue-themed restaurant is to open in London next month, with the launch of Red Dog Saloon in Hoxton.

The new restaurant is the first solo venture from Tom Berk, who previously worked as a restaurant and events manager at companies including Conran Restaurants and Carluccio's.

The 84-seat Red Dog Saloon, which will open in early June, will offer a menu focused on US barbecue dishes, including meat smoked in its hickory and mesquite-burning smoker.

Typical dishes will include Boston Butt, St Louis cut ribs, brisket and beef short ribs as well as a range of burgers and sandwiches. Average spend will be around £25 including drinks.

Interiors at Red Dog Saloon have been developed by Design LSM, whose other projects have included Galvin La Chapelle and Goodman. Inspired by the West, features will include dark leather banquettes, fans and shuttered windows as well as longhorns, water buffalo skulls and pictures of railroads and rodeo.

There will also be a 20-seat outdoor terrace overlooking Hoxton Square, while a downstairs bar is set to open in September.
