Roux Scholarship for 2011 is launched

Young chefs are being sought for the 2011 Roux Scholarship, the winner of which will receive a three-month stage at a three-Michelin-starred restaurant anywhere in the world.

Entrants, who must work in the UK and be between 22 and 30, have to submit a monkfish recipe for four people, accompanied by a rice dish and a green vegetable.

One of the judges, Alain Roux, said that monkfish is a versatile and meaty fish, giving competitors the opportunity to be creative. "But, don't be fooled into thinking it is easy," he said. "We are looking, as we always do, for clean, clearly thought-out recipes with a good balance of both flavour and technique."

The closing date for the 29th scholarship is 31 January 2011, with the semi-finals due to be held on 10 March 2011 in Birmingham and London.

Joining Alain Roux on the judging panel will be his father Michel, uncle Albert and cousin Michel Jnr, as well as Brian Turner, Gary Rhodes, Andrew Fairlie, David Nicholls and new judge James Martin.

* The winner of the 2010 Roux Scholarship, Kenneth Culhane of BaxterStorey, is travelling to New York to do his winning stage at Jean George, one of five restaurants in the city with three Michelin stars.

Culhane said he has always wanted to spend time in the USA and his love of Asian food has made him decide that working with Jean-Georges Vongerichten would be beneficial.

"He is a great chef who has managed to marry both French and Asian influences in a new and exciting way for many years," he said. "The trip also gives me time to explore New York, its food and its culture."
