With the early release of this year's Michelin guide for Great Britain and Ireland results causing shockwaves, Caterersearch has lined up an interview with its editor, Derek Bulmer, this week to find out just what happened.

With no new three-stars this year, four two-stars, and 26 one-stars there's plenty to debate, and  we’ll be chatting to Bulmer about this and what makes this year's winners' restaurants so special, as well as about the state of the UK restaurant market and Michelin’s plans regarding its international expansion.

Additionally we’d like to give you the opportunity to send in your questions for us to put to Bulmer.

It could be about the criteria used by Michelin to judge a restaurant; or how an establishment’s consistency is assessed. Perhaps you’re more interested in how greedy the inspectors are or how often Derek himself dines out, or want to know why there are no new three-star restaurants in the guide.

Regardless, send you questions to kerstin.kuhn@rbi.co.uk before Tuesday 20 February.

Using foraged ingredients is nothing new but the trend has become more mainstream over the past two years. However, the wider use of foraged food in restaurants also carries a certain amount of danger.
