The Academy of Food and Wine (AFW) has added £10,000 worth of bursaries for the winners and runners-up in its Gastronomy Team of the Year and Future Stars of Gastronomy competitions.

The two competitions, which are open to chef and waiter teams, encourage team work among back- and front of house staff, with the Gastronomy Team of the Year event designed for working professionals and the Future Stars of Gastronomy competition open to catering colleges.

Both competitions have been boosted with £3,000 worth of AFW training bursaries for their respective winners in addition to a 10-day trip to France, Italy and Portugal, as well as £2,000 of training for the runners-up.

"It's vital that there is effective communication between the front-of-house team and the kitchen as it's the only way customers will receive truly impressive service and get the best food and wine matches possible," said Nick Scade, chairman of the professional training body for front-of-house service.

"The service in many restaurants often suffers through lack of simple communication - it's vital that at all times one team knows what the other is doing."

The deadline for the Gastronomy Team of the Year and Future Stars of Gastronomy competitions, which are sponsored by food and drink campaign Discover the Origin, is 9 April.

Contact the Academy of Food & Wine on 020 8661 4646 for an entry form, or download a copy from the AFWS website.

Using foraged ingredients is nothing new but the trend has become more mainstream over the past two years. However, the wider use of foraged food in restaurants also carries a certain amount of danger.
