Peter Fuchs returns to Celtic Manor Resort as culinary director

Peter Fuchs has returned to the Celtic Manor Resort in Newport, Gwent, to take up the newly created post of culinary director.

Fuchs was the executive chef of the 330-bedroom resort when in opened in 1999. He went on to be appointed director of food and beverage before leaving in 2004.

In the intervening years he has worked as executive chef at two five-star hotels in Riyadh, Saudi Arabia - the Al Faisaliah and Al Khozama; at Harrods in London; and most recently at the Creta Maris Convention & Golf resort in Crete.

Fuchs, who began his career in Munich, said he was delighted to be back at Celtic Manor as the resort's first culinary director, where he will oversee six restaurants and a large conference and banqueting provision.

"The idea is to bring all the kitchen departments together to achieve consistency in delivering a five-star offering and standards of service throughout our food outlets," he said.

"During my previous time at the resort, I was very keen on establishing a culinary training programme at Celtic Manor and it is satisfying to return and see many of our current chefs and sous chefs have graduated through that scheme. I want to build on the training systems still in place and build a reputation as a centre of excellence for trainee chefs, using the best food ingredients in a high-quality kitchen environment."

Chief operations officer Ian Edwards said Fuchs had played an important part in the opening of Celtic Manor more than a decade ago. "As we continue to expand and attract more guests, he is exactly the right man to oversee our kitchens and our team of talented chefs," he said.
