Wok in a hard place

For operators wanting to extend their menu to include an Oriental offering but without the space or budget to invest in a standard wok station, Falcon has launched the Fusion Dominator range. Available with a four- or six-burner option, the range is based on the company’s G2101 model but with the addition of a 8.2kW (28,000BTU) vortex wok burner. The wok burner is cast-iron and has brass jets and a pan support adapted to cradle a wok, though it can also be used with standard pans that are more than 7in wide.

 

Other features include a flame fully protected from spillage and a 40% turn-down facility for simmering. The additional burners also benefit from an upgrade to 5.8kW (20,000BTU). The hob is made from a single piece of pressed stainless steel, and there are pull-out drip trays to catch spillages.
