Chocolate Orange Iris

Caterers seeking an Easter theme for their springtime buffets can now Say It With Flowers, a new range of pastry cases from Belgian baker Pidy. Available in either the poppy-based Corolle or the deeper-fill Iris designs, the cases come ready-baked and ready to fill with sweet or savoury fillings. Pidy has developed a new gourmet pastry for the line to ensure the cases retain their shape and do not become soggy even when left filled for several hours. It is midway between filo and shortcrust and uses sunflower oil in place of hard fat. Both flower designs are 4cm in diameter and come in catering packs of 96, 192 or 480 pastry cases, with prices starting from about 7p per pastry case.
