Fully organic Devon restaurant Percy's (see Caterer, 26 February, page 24) runs its own mail-order service for organic produce. Items on offer include home-reared lamb, breads, terrines and puddings, such as a chocolate, prune, hazelnut and Armagnac tart made with vanilla, lemon zest and cardamom. The restaurant sends out the frozen tarts to customers, who then refreeze them on receipt and warm them through when needed. The tart is available in two sizes: medium (1.12kg), which can be divided into nine portions; and large (1.71kg), which can offer up to 12 portions. The tarts can be served with créme fraéche or cinnamon ice-cream (both also available).
