London-based chef-restaurateurs Chris and Jeff Galvin have confirmed the site of their new venture in east London as being St Botolph’s Hall in Spital Square.

The building is a Grade II-listed former girls’ school located between Bishopsgate and Commercial Street will open as the brothers’ third restaurant in the autumn.

It will comprise three dining areas, including a space for fine-dining, a bar and an all-day café with outdoor seating. In total, it will have seating capacity of 290, but a name has yet to be confirmed for the restaurant.

It has taken the Galvin brothers around two years to tie-up the deal and it means the restaurant will now launch in a recession, although they said they’d never considered abandoning plans to expand their business.

Chris Galvin told Caterersearch: “It’s been a little bit scary at times, but we’ve got such a good site. It’s beautiful. There are some breathtaking original features and I really believe in it.

“If it had been a ‘box’ we might have thought twice. We’ll just have to work really hard at being good and over-delivering to our customers.”

Three other Galvin family members will also be involved in the project, including the restaurateurs’ brother, David, who will be in charge of ingredient sourcing, Chris’s wife, Sara, who will act as patron and host, and Chris’s eldest son Emile who will be operations manager.

The Galvin’s other sites comprise Marylebone’s Galvin Bistrot de Luxe, and Galvin at Windows in Park Lane’s Hilton hotel.
