Chez Bruce replaces harveys

Bruce Poole, formerly head chef at Chez Max in London, is to open a new restaurant in the capital on the site of Marco Pierre White's former restaurant, Harveys.

The establishment, to be called Chez Bruce, is due to open at the end of February after completion of a £30,000 refurbishment. The menu will be based on regional French cooking.

Before working at Chez Max, Mr Poole worked at Bibendum and the Square, both also in London. Nigel Platts-Martin, co-owner of the Square, is also backing Chez Bruce. Mr White is no longer involved in the site.
