British chef wins star for mallorca hotel

British chef Marc Fosh has won a Michelin star for Read's hotel restaurant in Mallorca. The 38-year-old has been head chef and director of the restaurant since the hotel's launch seven years ago. He describes his food as modern Mediterranean.

He said of the award: "It was a pleasant surprise, because we'd had no contact with Michelin and didn't get any tip-offs. But we had felt over the last couple of years that we were up to that standard."

Fosh worked in London at the Greenhouse restaurant before going to Spain in 1990 to work under three-Michelin-starred chef Martin Berasategui. He moved to Mallorca soon after and has lived in Spain ever since.

"I've been at Read's restaurant for seven years now and a lot has changed in Mallorca in that time. It used to be very tough sourcing ingredients and getting good supplies, but now, with the flights, we can get everything we need," he said.
