Glace Menagerie(17 June 2004 10:28)Health and safety concerns, as well as convenience, have encouraged many chefs to move towards pre-prepared stocks and glazes. Essential Cuisine already supplies stock mixes, jus and lobster bisque, but is now offering a new range of glaces to the market. The glaces - available in lobster, beef and game varieties - are free from artificial colours and flavours and can be spooned into a sauce base or used for a nage, a drizzle, a dressing or as a glaze.
