Offbeat cheeses(28 July 2004 10:45)Paxton & Whitfield has introduced a new range of Italian artisanal cheeses, including some lesser-known varieties such as Tuma rusa from Piedmont, a 200g sheep's milk cheese with a pink washed-rind skin. Also from Piedmont is the 200g Rabioli tre latte, an unpasteurised cheese made with three milks (cows', sheep's and goats') to give an almost sweet, creamy flavour.
