How to...(07 December 2004 16:10)The recipe doesn't require exact quantities, which can be varied to suit tastes, the occasion or numbers.
Ingredients (Serves 60) - 12 litres of red wine - 1 bottle of vodka - 1lb of white sugar - Mixed peel of oranges and lemons - Star anise, cinnamon sticks and any other spice you fancy Method - Tie spices in a bouquet garni. Avoid using ground spice as these tend to clog the drinking experience. - Pop all the ingredients into a large pan and place on the edge of a stove for three to four hours. It should be allowed to mull, but not boil, as this burns too much alcohol. - Allow it to reduce until it becomes a runny "cough mixture" consistency and serve in a handled glass.
