Novelli to launch chain of gastropubs

Celebrity chef and restaurateur Jean-Christophe Novelli is planning to open a string of gastropubs in the Home Counties.

Just weeks after announcing his departure from the Auberge du Lac restaurant at Brocket Hall, Hertforshire, the French chef has revealed he will open Novelli at the White Horse, a gastropub in nearby Harpenden.

Director of Novelli Associates Valerie Morrison said the company had formed a joint venture with two Harpenden-based businessmen, which is called Sweet Medicine, and hoped to open up to 10 gastropubs around London.

The White Horse is currently being redeveloped, with the bar reopening at the end of November. The restaurant, which will serve modern, European-style food, will open in January.

Novelli will be executive chef at the pub, although as yet no head chef has been recruited.

Meanwhile, Brocket Hall has announced that 27-year-old Phil Thompson will replace Novelli as head chef. Thompson has worked at Auberge du Lac since 2001.
