Hotel du Vin opens two new sites in £17m deal

The roll-out of boutique hotel chain Hotel du Vin continues to gather pace with the signing of a £17m deal on two new sites, in York and Cambridge.

The Grade II-listed building on Trumpington Street in Cambridge was originally part of the university. Once refurbished, some of its 42 rooms will feature private gardens as well as a bistro, bar, billiard and cigar rooms. It is due to open in spring 2007.

York's Grade II-listed Georgian property on the Mount is set in four acres of gardens and will also be transformed into a 42-bedroom property with bistro, bar and cigar room. It will open in late summer 2007.

Hotel du Vin chief executive Robert Cook told Caterer exclusively he was also pursuing new sites in Durham, Chester and Edinburgh, and hoped to have signed a further two properties by the end of this year.

He said: "Cambridge and York will be fabulous additions to the Hotel du Vin stable and fit directly into our cathedral and university town formula. This puts us on target for our plan of 25 hotels by the end of 2008."
