How to… make the perfect egg and cress sandwich

(and why it's good for you)

Ingredients
3 hard-boiled eggs
3tbs mayonnaise
Salt and freshly ground pepper
1 punnet salad cress, with stalk and leaf
4 slices soda bread, buttered

Method Peel and finely chop the eggs. Combine with the mayonnaise, salad cress, salt and pepper. Pile on buttered soda bread and sprinkle with cress.

Eggs are a great source of iodine (needed to make the thyroid hormone) and phosphorus (for healthy bones). Also included is zinc (fights infections), selenium, antioxidant, calcium (good for the bones and nervous system) and iron (for red blood cell development).

Cress contains glycosides and mustard oil, stimulating the kidney and metabolism, and fortifying the stomach and gall bladder. It's also rich in carotenoids, so it's good for your eyes, too.
