Shaws bistro and tapas bar in Old Fishmarket Close, Edinburgh, has recruited Luigi Lanzotti as restaurant manager and Colin Smith as head chef. Lanzotti was general manager at Edinburgh's branch of Italian restaurant chain Est Est Est. Smith also comes from the city's Est Est Est, where he was a chef. Before this he worked as training and development chef at a number of the group's branches.
