Roux Scholar to split winner's stage between two of Europe's top restaurants
Pravin Sharma, the 2006 Roux Scholar, will split his three-month winner's stage between two of Europe's three-Michelin-starred restaurants.
His first month of training will be with the UK's own Heston Blumenthal at the Fat Duck in Bray, while during the second month he will be under the tutelage of Olivier Roellinger at his hotel Maisons de Bricourt in Cancale, Brittany.
The Maisons de Bricourt won a third star in January of this year for its fine-dining operation, Le Chateau Richeux, and Roellinger is renowned for using spices and seafood in both this and its sister bistrot, Le Coquillage.
Blumethal's boundary-pushing cooking at the Fat Duck is famous for its scientific backbone.
Sharma, 28, won the Roux Scholarship, one of the most prestigious events on the UK competition circuit in March. He is sous chef at Silk restaurant in the Courthouse Kempinski hotel, London.
