The Périgord truffle (also known as Tuber melanosporum or the Black Diamond) has joined the line-up at Wild Harvest. This most prized of European black truffles has been popular since Greek and Roman times for its intense rustic perfume, which couples well with risottos, sauces, butter, cheese and foie gras, as well as for its therapeutic and reputed aphrodisiac properties. An average truffle weighs between 40g and 50g and costs between £80 and £90 per 100g.
