Latest NewsCollege gives students 'a false sense of security', says Marco Pierre White(26 April 2007 11:35)Marco Pierre White has questioned the value of catering colleges, insisting that learning on the job is the only way for young hospitality workers to develop their skills. In a wide-ranging interview with Caterer, the former three-Michelin-starred chef-turned-restaurateur said he considered formal education a "waste of time", adding that colleges were not able to prepare people for the industry and the challenges of working in a kitchen. "College is the biggest waste of time," White said. "It gives a false sense of security. In the real world they struggle. I believe in day-release for those who think it's important to get qualifications." White added that the hospitality industry allowed people to express themselves, better themselves and create security. "Get into a good kitchen, stay for five years, keep your head down, take the bollockings and learn your trade," he said. Article continues below
