This diet not only yields a light, delicately textured meat with a milky taste similar to Pyrenean lamb but, according to research by the University of Bristol, much higher levels of the omega-6 and omega-3 essential fatty acids than in lowland lambs. The animals are individually traceable to the farm-assured fell farmers, who are also involved in environmental schemes in Cumbria.
