Chef-proprietor Michael Bedford, of one-Michelin-starred Trouble House near Tetbury, is launching a café-delicatessen in the Gloucestershire village.

Speaking exclusively to CatererSearch, Bedford confirmed that he would be leaving the inn at the beginning of August and opening his new business on the village’s high street in mid August.

The café-deli will be called Chef’s Table and will stretch over two floors, with a 35-seat cafe-bistro on the first floor.

Bedford intends to offer the same style of seasonal Franco-British food with which he made his name at the Trouble House.

He will offer around 12 dish choices on the menu and main courses will cost around £14.

Bedford said: “We’ll have a fresh fish display in the shop and we’re going to have a special cheese room – hopefully with 75% British cheeses available.”

He added that the entire staff of Trouble House would transfer to Chef’s Table with him.

The Trouble House’s freehold is owned by Wadworth.

A spokesman for the brewery confirmed that the leasehold of the pub is being taken on by chef Martin Caws, previously head chef at London’s Village East, Pont de la Tour and Mirabelle restaurants.
