Former St David's hotel executive chef buys first restaurant

Georg Fuchs, former executive chef at the five-star St David's hotel in Cardiff Bay, has landed his first restaurant.

Together with his wife Einar, Fuchs has bought the freehold for Illtud's 216 in Llantwit Major on the Glamorgan Heritage Coast in Wales, from owner Andrew Davies for an undisclosed sum.

Illtud's 216 occupies a former 16th century malt house within the historic old quarter of the town.

First opened in 2005, it comprises a 55-cover restaurant with separate bar area, three-bedroom owner's accommodation and a private garden.

Fuchs will oversee the culinary side of the business, while his wife manages the financial and administrative side and also takes on responsibility for front of house.

Georg and Einar Fuchs moved to the UK in August 1997 when Georg became executive chef at the Langham Hilton in London. In 2003 he replaced Anton Edelman as head chef at the Savoy but left the hotel two years later, moving to St David's in 2005.

Ken Knight of Christie & Co's Bristol office, which negotiated the sale, said: "Georg and Einar are planning to offer a variety of traditional signature dishes and will offer these for lunch and dinner. The couple also intends to expand the restaurant's offering of breakfast, light snacks and cakes."
