Eric Chavot named consultant chef for Hotel Chalet Blanc

Eric Chavot, head chef of London's two-Michelin-starred restaurant at The Capital hotel, has been named consultant chef for Hotel Chalet Blanc in France.

A member of Small Luxury Hotels of the World, Hotel Chalet Blanc is situated in Montgenèvre in the French Alps and features the La Table Blanche restaurant which is set to open in the New Year.

Chavot has developed the concept for the restaurant and has been closely involved in sourcing local suppliers and designing the kitchen. He has created the menus with head chef Sharon Frannais, who previously worked under Chavot at The Capital and joins La Table Blanche from Francois Plantation in St. Barthelemy.

La Table Blanche will serve breakfast, brunch, lunch, afternoon-tea and dinner, with signature dishes including Jerusalem artichoke velouté with foie gras tortellini; roasted rack of lamp with ratatouille jus and aubergine caviar; and chocolate tart with almond, hazelnut, peanut and sesame seed ice cream.

Chavot said: "I'm naturally very excited about taking my love for and experience in French cooking and applying it to a more relaxed atmosphere in the French Alps."
