Lexington adds to chef team as it pursues growth
Contract caterer Lexington has bolstered its chef development team with a new recruit as it looks to achieve double-digit turnover this year for the first time.
Mark Parfait, who was food development director at Harbour & Jones (H&J), has joined the caterer to assist chef director Rob Kirby.
Parfait was development chef for the City at Elior's Avenance division before joining H&J and previously worked under Kirby during the latter's time as Avenance's executive chef.
Mike Sunley, managing director of Lexington, said: "Mark is an excellent chef and his experience and love of food further strengthens the team."
Meanwhile, Harbour & Jones has recruited ex-Compass man Kevin Schofield to its chef team and is in the process of recruiting another senior chef to work alongside him.
