The number of meals served by UK contract caterers grew by 3.8% to 1.59 billion in 2007, according to the latest survey by the British Hospitality Association, with business and industry accounting for nearly 42% of the total.
The total number of meals served by food service management companies has risen by 145% since 1991, thanks to new styles of food presentation and the rising popularity of grab-and-go formats, notably in the business and industry and leisure sectors.
Healthcare and state education accounted for almost 500m meals in 2007, compared with just 44 million in 1989.
The number of people in employment has grown by 12% over the past 20 years, but the number of meals served by contract caterers to people at work has grown ten times faster over the same period.
