Daniel Galmiche to join Forbury hotel
French chef Daniel Galmiche has joined the five-star Forbury hotel, in Reading, Berkshire, as executive chef, Caterer can reveal.
Formerly executive head chef at Cliveden in Berkshire, where he gained a Michelin star at Waldo's in 2006, Galmiche has been put in charge of all of the catering at the 23-bedroom Forbury, including two restaurants and room service.
He will oversee the hotel's existing Cerise restaurant, which offers a Mediterranean menu, and will launch a new fine-dining outlet called Eden next month. This will comprise an intimate 20-seat dining room, and will serve a contemporary French menu with a focus on seasonal British produce. Eden head chef will be Frederic Michel, who previously worked alongside Galmiche at Cliveden.
Galmiche told Caterer he was delighted to return to Berkshire and to be working with such a "supportive and passionate team" at Forbury.
"Forbury is a beautiful property, and I plan to deliver a food offering that will match the hotel's high standards," he said. "The aim is to gain a Michelin star next January, and possibly even more in the future."
Galmiche has joined the Forbury hotel from London's Clermont Club, a private members' club on Berkeley Square, where he was executive head chef for nine months. He previously held a Michelin star at Harvey's, in Bristol, and at L'Ortolan, near Reading.
