Moshi Moshi founder starts new Japanese restaurant

Caroline Bennett, founder and managing director of sushi group Moshi Moshi, has launched a new restaurant in the City of London.

Soseki, which quietly opened its doors last week, is a 60-seat top-end Japanese restaurant located on St Mary's Axe just below the Gherkin.

Interiors include 1920s antiques imported from Japan, and the restaurant features partitioned dining areas as well as a small sushi counter and a bar with views on to the Gherkin.

Executive chef Kurokawa Takanori is in charge of the menu at Soseki, with general manager Jean-Sylvain Bombois overlooking front of house. Average spend is around £60 including drinks.

The food at Soseki is inspired by the Japanese concept of kaiseki kappo, where diners will not find a menu of itemised dishes but will rather be offered a set menu created by the chefs, involving a variety of cooking techniques including grilled and steamed ingredients.

"This is a traditional way of eating which makes use of the best seasonal ingredients available to the chef each day," Bennett said. "It has the added benefit of being the most sustainable way of eating, especially with regards to fish, as the chefs will simply cook whatever is available."

Like Moshi Moshi, which has outlets in London and Brighton, all of the seafood at Soseki comes from sustainable sources.
