Albert Roux attends official launch of Brasserie Roux

Silver Catey winner Albert Roux attended the official launch of Brasserie Roux at the recently opened £180m Sofitel London Heathrow at Terminal 5 last Friday (5 September).

Brasserie Roux is a joint venture between Compass Group's Restaurant Associates and hotel owner Arora International.

The kitchen at the new restaurant is being headed up by Jonathan Predy, previously senior sous at London's Wolseley, with the 100-seat front of house under the command of restaurant manager Thierry de Magneval, who has worked at Le Gavroche and was assistant brasserie manager at 1 Lombard Street in the capital.

The new restaurant incorporates a chef's table and has private dinning facilities. For guests short on time there is the Roux Express menu, which provides four dishes served within 20 minutes.

The restaurant's atrium has interiors designed by KCA International, designers of Dubai's Burj al Arab hotel.
