Bryn Williams becomes chef-proprietor of Odette's

Bryn Williams has taken full control of north London restaurant Odette's, two years after being appointed as head chef, Caterer can reveal.

The Welsh chef joined Odette's in autumn 2006, after it reopened under the ownership of entrepreneur Vince Power. He has now bought the Primrose Hill restaurant with the aid of a bank loan and has become sole chef-proprietor.

Williams, who took part in the BBC's Great British Menu in 2006, plans to make a number of changes both to the interior and the menu of the 70-seat restaurant, which this year celebrates its 30th anniversary.

He told Caterer he would revamp the bar area and launch a dedicated bar menu and focus on redoing the garden.

"I'm also planning on changing the menu by adding an à la carte section and making it slightly less expensive," Williams said. "I am nervous about running the restaurant as my own business but at the same time it is a very exciting time for me and I really want to make Odette's a success."

Williams was previously senior sous chef at the former Michelin-starred Orrery in Marylebone, London, where he worked for three years. Before joining Odette's, he was involved in the opening of Galvin at Windows at the London Hilton on Park Lane.
