Ed Wilson to open Covent Garden wine bar and restaurant

Ed Wilson, former head chef of Sonny's in Barnes, south-west London, has launched a wine bar and restaurant in Covent Garden.

Terroirs on William IV Street is spread over two levels comprising an upstairs wine bar, which launched last week, and a downstairs restaurant set to open early next month.

Serving a list of 200 wines, with a focus on organic and biodynamic wines, the 70-seat wine bar serves a bar menu with Mediterranean influences including cheese and charcuterie boards. The 60-seat restaurant will serve a menu focused on British ingredients, with Wilson overseeing the kitchen.

His business partners Vincent Wollard and Richard Martinez are overseeing the wine side and front of house respectively.

Wilson, who previously worked with Chris Galvin and earlier this year helped relaunch the Soho Group's Café Boheme with Henry Harris, said the inspiration for the concept came from natural wine bars in Paris.

"There are few places London where you can go and just have a good glass of wine," he said. "We offer wine by the glass, carafe and bottle with prices from £3.50 to £8.50 for the glass."
