British Michelin-starred chef to open restaurant on Mallorca

Marc Fosh, the only Michelin-starred British chef in Spain, has left Reads hotel in Mallorca to set up his own restaurant on the island.

Fosh, who worked at Reads hotel for 13 years and first won a Michelin star at its Bacchus restaurant in 2003, will open a new restaurant in Palma in April.

The yet-to-be-named venture will be located n the old part of Mallorca's capital comprising a 60-cover restaurant including a kitchen bar element with show cooking.

Fosh worked in London at the Greenhouse restaurant before going to Spain in 1990 to work under three-Michelin-starred chef Martin Berasategui.

He moved to Mallorca soon after and joined Reads as head chef and director of its restaurant when it first launched in 1996.

In 2004 he launched Fosh Food, a show cooking restaurant, cookery school, and delicatessen in Palma.

Fosh said that for a long time he had "felt frustrated at Reads" and wanted to move on.

He said: "Things came to a head recently and, I am just happy now to be focusing on future projects and really excited about the new restaurant."

"The new restaurant will offer a less sophisticated, stripped down version of what I have been doing at Reads with slightly more traditional flavours and average spend will be €30 for lunch and €50/60 for dinner," he told Caterersearch.

When asked whether he hoped to retain his Michelin star, Fosh said: "That would be great and I think it's is a reasonable target. That said we won't be obsessed about Michelin stars."
