Food and Service Management Survey 2007

Annual turnover in the UK contract catering market grew by 3.9% to £4.1m in 2008, according to the latest survey by the British Hospitality Association.

Wage and food costs accounted for 77% of the total, similar to 2007.

The biggest rise came in the cost of food and beverages, which increased by 8% to £1.4b. Some companies said their food costs had soared by as much as 20% year-on-year.

With wage increases being contained below 3%, labour costs grew marginally by 0.5% to £1.81m, reflecting also a decline in both full-time and part-time staff.

Other costs increased by 3.8% to £405m. The price of energy has grown by up to 45% since 2007 in some cases.

Income from management fees rose by 3.7% to £560m.
