Claudio Pulze sells Brasserie Saint Jacques

Veteran London restaurateur Claudio Pulze has sold his French restaurant Brasserie Saint Jacques in Mayfair.

Pulze, who opened the restaurant last summer, said it was no longer a viable business and sold it to sommelier Richard Weiss and chef Laurence Glayzer. The pair, who has bought Brasserie Saint Jacques for an undisclosed sum, will oversee its front-of-house and kitchen respectively.

Pulze told Caterersearch he blamed the economic downturn for his decision to sell off the restaurant.

"It didn't work. We launched in July last year and initially the restaurant did really well but then things got significantly worse. It's a tough economic climate out there and it wasn't a viable business," he said.

"I launched Osteria dell'Angolo in January this year and I had too much on my hands, I stretched myself too thin. I met Richard and Laurence and they seemed like the right people to take it over."

The 70-seat Brasserie Saint Jacques is located on the former site of Ristorante Fiore on St James's Street. Its kitchen was implemented by Pierre Koffmann, who also staffed it and developed the menu.
