Catey winners relaunch Croque Gascon restaurant as fish and chip outlet

Double Catey winners Pascal Aussignac and Vincent Labeyrie have relaunched their Croque Gascon restaurant at London's Westfield shopping centre, Caterersearch can reveal.

The owners of the Michelin-starred Club Gascon and the Comptoir Gascon and Le Cercle restaurants in London, have changed the French fast-food concept to a fish and chip outlet to better cater for the Westfield market.

"The French food wasn't very popular at Westfield," chef-patron Aussignac told Caterersearch.

"People don't think about eating French food when they go shopping and we needed to change the concept so we came up with the idea of fish and chips as nobody else was doing this."

Called Chip and Fish, the restaurant offers a menu of seafood including oysters, mussels marinieres, fish soup, fish cakes and fish and chips, with all seafood coming from sustainable sources in the UK.

"People will probably say that it's strange for French chefs to do English food but how many British chefs are cooking French food?" Aussignac said.

He added that while the Croque Gascon concept didn't work at Westfield, he plans to relaunch it in a different location in the future.

"It's a great idea and everyone who knows us really likes it," he said. "We have introduced some of the Croque dishes at Comptoir and they have been really popular."

Aussignac and Labeyrie first launched Club Gascon in London's Smithfield in 1998 and the restaurant has held a Michelin star four eight consecutive years.

The pair have won two Cateys: the Newcomer award in 1999 and the Restaurateur of the Year Independent Catey in 2007.
