The programme will include a series of practical masterclasses in the latest French culinary techniques, including pastry work, and tutored tastings matching foods with wine. Delegates will dine at some of Lyon’s top gastronomic restaurants including “Saisons”, two-Michelin-starred Guy Lassausaie and “Buchan Layonnais” le Garet. Article continues below
We have identified six college chef-lecturers wishing to attend the programme. Now, we are looking for six chefs from industry to accompany them. After the programme, we will invite all delegates to a Caterer debate to share their experiences and discuss ways in which industry and academia can work together more closely to ensure students enter hospitality with the skills employers need. We anticipate the total cost of the complete programme for each delegate will be around £1,475, including all tuition, return air fare and accommodation.
