Michelin-starred Hand & Flowers owners to open second venue
Tom and Beth Kerridge, owners of the Michelin-starred Hand & Flowers in Marlow, are to open a second establishment in the market town later this month, Caterer can reveal.
The winners of the 2007 Catey Newcomer Award have taken on the lease of the Clayton Lounge in Oxford Road, which is situated two minutes' walking distance from the Hand & Flowers.
The Clayton will remain as a wet-led property but will serve Kerridge's signature modern British cooking as bar food/tasting dishes. It has a capacity for about 150 people standing and will cater for approximately 40-50 people.
The Kerridges exchanged contracts on the business, which they are operating with business partners Laura Aherne, formerly of the Hand & Flowers and the Clayton, and DJ Lennox Leech, who has a background in marketing, a week ago and hope to complete on 11 January. Following a "face lift", they plan to reopen the bar by the end of the month.
Dishes, which will be priced at around £4.50-£5.50 and ordered at the bar, are likely to include confit of cod with braised lentils and chickpeas and chorizo stew and will be available from 12-9pm daily.
"The food is going to be cheap and tasty," said Tom Kerridge, adding that the food would be prepared at the Hand & Flowers and one chef from the team will be stationed at the Clayton for service. "All the mise-en-place will be done at the Hand & Flowers so the standards and flavours will be the same."
