
Food and labour costs accounted for 77% of turnover in the UK contract catering industry during 2008, according to the latest survey by the British Hospitality Association.
While the percentage is unchanged on 2007, the breakdown figure shows that food costs are continuing to rise while labour costs decline.
The shift reverses the more general trend to date for food to decline and labour costs to grow as a percentage of turnover.
Food costs as a percentage of sales increased by 1.2 percentage points (to 32.8%) while labour costs fell by 1.2 percentage points to 43.8%.
These facts and figures are reported in the Food and Service Management Survey 2009, published by the British Hospitality Association. The report is available for £150 as a hard copy or for £100 as a PDF file.
