Ex-Nobu head chef to head up new Japanese restaurant

A former head chef of Michelin-starred restaurant group Nobu is set to head up a new Japanese restaurant this spring.

Scott Hallsworth, who worked with Nobu for six years, has been appointed as head chef of new Japanese restaurant Wabi set to launch in Horsham, West Sussex, in May.

Owned by entrepreneur André Cachia, Wabi will be spread over two floors comprising a restaurant and cocktail bar. It will also include a large aquarium holding more than 2,000 litres of salt water, while interiors, designed by Studio 21, will feature dark woods and muted colours.

The menu will include signature dishes such as slow cooked enoki mushroom risotto with edamame; and shaved truffle and smoked duck breast tataki with foie gras kabayaki and ginger amazu sauce.

Australian-born Hallsworth, who was head chef at Nobu London before setting up the group's Australian outlet in Melbourne, said Wabi's goal was to extend the team's "years of passion and creativity" to its guests.
