Hawksmoor to open second site in West End

London steak restaurant and cocktail bar Hawksmoor has unveiled details of its second site, which is set to open in the West End this autumn.

Owners Will Beckett and Huw Gott will launch the sister restaurant in the former Watney Combe brewery in Covent Garden in October. Hawksmoor Seven Dials will be a 120-seat restaurant which will also include a 50-cover cocktail bar and a 14-seat private dining room.

It will have a similar food offer to the original Hawksmoor, which opened in Spitalfields in 2006, with head chef Richard Turner overseeing the kitchen. He will be replaced by sous chef Lewis Hannafold at the original Hawksmoor.

Co-owner Gott told Caterersearch that the menu at Hawksmoor Seven Dials would include the usual British steaks but there would also be a new focus on seafood.

"We'll have a bit more space in the kitchen and will install a Josper grill which we'll use to grill fish and seafood," he said. "We'll have oysters, scallops and Dublin Bay prawns and there'll also be a fryer with only duck fat in it which we'll use to make triple-cooked duck-fat chips."

The interior at Hawksmoor Seven Dials, which will be designed by Macaulay Sinclair, will include original features such as a vaulted brick ceiling and a series of Victorian cast iron columns joined by a reclaimed parquet and oak panelling as well as tiles sourced from London Underground restoration suppliers.

Beckett said the Hawksmoor expansion had been organic. "The idea behind this is that we are dramatically overbooked and have a lot of staff who are ready to be promoted," he said. "If we can carry on doing what we are doing and demand continues then we would look to go further."
