Westbury Mayfair appoints Alyn William to head up its flagship restaurant

The Westbury Hotel in London has appointed Alyn Williams to oversee its signature restaurant, the Artisan, which will reopen as Alyn Williams at the Westbury in September.

Williams joins the five-star Mayfair hotel from Marcus Wareing's two-Michelin-starred restaurant at the Berkeley, where he has been head chef for the past four years. Previously he worked at Gordon Ramsay's restaurants on Royal Hospital Road and at Claridge's as well as the Groucho Club.

At the 60-seat restaurant, he will offer a modern British menu rooted in classic French techniques. Typical dishes will include scallops, cucumber, Aquitaine caviar and Granny Smith apple; Rhug Estate suckling pig with candied endive, potato croquette and girolles; and walnut whip with vanilla and walnut ice-cream.

Williams said he was thrilled to launch his first independent venture. "To have your name over the door comes with big responsibility, but it is a challenge that I am now eager to embrace," he said.

"I have been the support to a superb chef, Marcus, for many years, and have learned so much in his kitchens. The time is right for me to strike out on my own, and this new venture has come at the right time."

The restaurant will undergo a "dramatic transformation" overseen by Alex Kravetz Design and will also include a 20-seat private dining room as well as a 10-seat wine room surrounded by walls of wine bottles.
