Polpo duo to launch third site
Caterer can reveal that Russell Norman (pictured) and Richard Beatty, the duo behind London restaurants Polpo and Polpetto, will launch their third site next month.
Located on Rupert Street in Soho, Spuntino - which means ‘snack' in Italian - follows the small plates theme of their first two restaurants, also in Soho.
However, where Polpo and Polpetto serve Italian inspired menus, the food at Spuntino will be influenced by downtown New York. Dishes will include macaroni and cheese, truffled egg toast, shoestring fries, soft-shell crab with Tabasco aioli and meatball sliders. The drinks list will include revived prohibition cocktails such as the Sazerac and the Bronx.
Like its sister sites Spuntino will open all day, seven days a week and will not take reservations.
Seating 25, Spuntino's interior is being designed by Norman together with Soho metal worker Bela Pasztor who has created wire cages for carbon filament light bulbs hanging over a pewter-topped bar.
The room will feature uncovered Victorian glazed brick and mosaic walls, while large rusted tin tiles, salvaged from a New York warehouse, cover the high ceiling and reclaimed classic diner stools line the bar.
Commenting on the new opening Norman said:"I've been thrilled by the tremendous excitement that has greeted Polpo. It's clear that London has an appetite for fun dining. I hope everyone will find Spuntino just as exciting, and maybe a little surprising."
Based on a Venetian bacaro, Norman and Beatty first launched Polpo in 2009 to huge critical success. The duo opened Polpetto last summer. Norman was previously operations director at Caprice Holdings.
