Martin Blunos to oversee restaurant in Cardiff's Thistle hotel

Former Michelin-starred chef Martin Blunos has been appointed executive chef of the new Crown Social restaurant within Thistle Hotel's the Parc in Cardiff.

The official opening of the 60-seat restaurant next month is as a result of a new partnership between Thistle Hotels and South Wales-based Crown Hotels and Restaurants, which already operates the Crown at Whitebrook, near Monmouth, and the Crown at Celtic Manor.

Blunos, who established a name for himself at his two-Michelin-starred restaurant Lettonie, which originally opened in Bristol and later transferred to Bath, recently joined Crown to help expand its restaurant business into new areas.

"The opening of the Crown Social at the Parc, one of Cardiff's most established hotels, is very exciting and something completely new for the city," said Blunos. "I've assembled a first-class team for Crown Social and now can't wait to get started."

The 140-bedroom hotel has recently been refurbished and the new restaurant under Blunos will offer a contemporary take on classic Welsh dishes.
